Recipe for innovation: Perspectives from Nestlé’s CTO on how Singapore is reinventing the future of food

Nestlé has played a longstanding and integral role in shaping Singapore’s food innovation landscape. With over 280,000 employees and operations in more than 80 countries, the Swiss company established its regional R&D hub here over four decades ago, and has steadily expanded its capabilities to meet the evolving needs of consumers across Asia and the world. Today, the Nestlé R&D Centre in Singapore serves as a critical node in the organisation’s global innovation network, developing science-based solutions that advance its agenda in nutrition, health, and sustainability.

Singapore remains central to Nestlé’s plans to lead the future of food. The 160-year-old company continues to strengthen its partnerships with local enterprises, startups, research institutions, and the Singapore Economic Development Board (EDB). These collaborations have enabled it to create products that resonate with regional and international consumers, including Singapore-developed innovations like breakthrough sugar reduction technology and new experiences for both hot and cold coffee. These innovations have been integrated within offerings across Nestlé’s brands, including Nescafé, Starbucks, Blue Bottle, KitKat and Milo.

In this exclusive Q&A, Nestlé’s Executive Vice President and Chief Technology Officer Prof. Dr. Stefan Palzer discusses the company’s global R&D focus, the strategic role of the R&D Centre in Singapore, and how Nestlé is harnessing artificial intelligence (AI) and local partnerships to future-proof its innovation pipeline.
 

What are Nestlé’s global R&D priorities, and what role does the R&D Centre in Singapore play?

At Nestlé, our aim is to provide tasty, nutritious, affordable, and sustainable products for people and pets — regardless of their life stage, cultural or local contexts, or specific health needs.

Our R&D priorities centre on leveraging our deep science and technology expertise in nutrition and taste, food safety and quality, affordability and cost, and sustainability. We focus on strategic initiatives such as nutrition across life stages and for therapy. Other areas include new flavours and textures, modern cooking, and next-generation coffee systems.

Additionally, we are seeding new initiatives for potential growth areas in the future, by exploring opportunities in healthy longevity, weight management, and women’s health. We are also investing in digital tools and AI.
 

Tell us about some interesting trends in food science and technology – and how Nestlé is exploring them in Singapore?

There are many exciting trends happening in the food and beverage sector. One of them is the growing demand for at-home barista experiences, especially among cold coffee lovers. The R&D team in Singapore has embraced this trend by crafting tasty, iced coffee solutions, which have been launched globally under the Blue Bottle and Nescafé brands.

Another important area is women’s health. There is an increasing need for unique solutions tailored for their different life stages, ranging from fertility to menopause. We recently launched our Materna range of supplements, which support women through their pregnancy journey. Part of the global clinical trial to substantiate these products was conducted in Singapore. This was carried out in collaboration with external partners, as part of a first-of-its-kind trial.

Finally, as the global population continues to age, healthy longevity is becoming a key priority. Through our local R+D Accelerator, we piloted a great tasting beverage made with oat beta-glucan. This product draws on our proprietary technology to support heart and digestive health in adults.
 

How does Singapore’s R&D ecosystem contribute to Nestlé achieving its ambitions?

Our expanded partnership with EDB will help us strengthen local capabilities in areas that are essential for the future of food. These include hybrid plant and dairy products, alternative proteins, digital transformation, and sustainable packaging.

Local scientific collaborations are also crucial. For example, we have established a sustainability research fund and a food science scholarship with the National University of Singapore. This is in addition to several ongoing collaborations with A*STAR, Singapore’s largest public research organisation. At the same time, our R+D Accelerator offers local startups access to our expertise and facilities, to develop and test their novel concepts .
 

How is Nestlé utilising AI, data analytics, and automation to drive R&D and maintain your competitive edge?

We are leveraging AI, machine learning, data science, and automation to support innovation and manage complexities. These technologies help our teams, which consist of engineers, product developers, and nutritionists, to connect the dots quicker and gain valuable insights.

For example, we are rolling out a new recipe optimisation tool. This tool helps our product developers balance trade-offs between ingredients, nutrition, cost, and sustainability, while still meeting consumer expectations.

In Singapore, we are strengthening our digital and AI capabilities. Our efforts include AI-powered platforms that offer real-time insights on consumer trends and concept generation. We have also implemented digital twins in our R&D pilot plants and factories, which enable us to improve production efficiency.

Globally, we recently announced the creation of a new R&D centre in Switzerland for deep tech, a first-of-its-kind in the food and nutrition industry. This builds on our existing expertise in sensor systems, solutions for product recognition, remote control and display solutions. The new centre will screen, test, and develop new generations of sensors, robots, coding systems, high-performing AI, and virtual and mixed reality solutions to increase efficiency in research, innovation, and operations.
